Tajine Recipe

This Tajine is delicious. You can substitute the chicken for lamb, prawns, tuna, beef – This recipe is extremely versatile! Malsouka is a wheat free “pancake” which wraps all the ingredients.

2 chicken legs
1 teaspoon turmeric
50g parmesan cheese
8 raw eggs
2 hard boiled eggs
10 sheets Malsouka
1/2 onion
Extra virgin olive oil
Salt to taste


1 : In a saucepan, saute the chicken legs in extra virgin olive oil with the chopped onion and turmeric.

2 : When the chicken is browned, add water to cover chicken and simmer until chicken is cooked, leaving some of the sauce in the pan for later.

3 : When the chicken is ready, debone and chop into small pieces. Transfer chicken into a large bowl and pour over the remaining sauce.

4 : Add the raw eggs and the grated Parmesan cheese.

5 : Cut the boiled eggs into small pieces and add them to the bowl with the remaining ingredients and mix.

6 : Place sheets of Malsouka into an ovenproof bowl, leaving the edges overhanging to fold later. (Remember to leave a couple of sheets to top the dish off later.) Place on sheet in the bottom centre to ensure the filling doesn’t run out. Pour in the mixture.

7 : Fold the overhanging edges over the top of the mixture.

8 : Place the remaining sheets of Malsouka over the top to seal the filling inside and brush the surface with a raw beaten egg.

9 : Bake on a low shelf at 180° for 30 to 40 minutes.
