Rouz Djerbi (Djerbian Rice) Recipe

Rouz Djerbi Recipe
NOTE: You can substitute the Prawns with cooked Chicken, Lamb, Tuna, Minced Beef etc. Another versatile dish!


80g Mint (Dried is best, but if you can only get fresh, use 120g)
50g Fresh flat leaf parsley
300g Fresh or Frozen Peas
1 Tray of chicken breasts (about 3 or 4 breasts will do)
1 Kilo of Thai Rice (Any rice that is not sticky when cooked)
3 Whole bulbs of Garlic
2 Large Onions or 200g Spring onions
1 can Double Concentrated Tomato Paste
Harrisa Paste
Olive Oil. (Extra virgin)


1 : Wash the rice and place it in the HUGE mixing bowl.
2 : Finely chop the Mint, all of the Garlic, the parsley and the onions, then throw in with the rice.
3 : Add the peas.
4 : Dice the chicken (Raw) and throw that in too.
5 : Add the whole can of tomato paste
6 : Add 3 table spoons of Harrisa paste (Vary according to your taste, or leave it out if you dont like spicey food)
7 : Pour a generous amount of olive oil over the ingredients and mix. When It’s sticking together and thoroughly mixed and coated in olive oil, you’re ready to cook.

Fill up the steamer, wait for the water to boil.
Add the mixture to top half of the steamer and put the lid on.
Stir the rice a few times during cooking.
It usually takes around 1h30 minutes to 2 hours to cook. Maybe a little longer depending on type of rice. When the rice is soft, it’s cooked.
